I just got a text from HR saying, "Please send us a short description from your previous work experience". Should I type the response on Gmail itself or type the response on MS Word, convert to PDF, then send as an attachment on Gmail?

Filters is one place to look, but the mailbox you are checking could have forwarding set up on it. Look in settings > forwarding. See if the option is set to delete your mail after forwarding. Turn it off or leave it and use the mailbox you are forwarding all your messages to instead.
